Steak Queso Bowl with Homemade Guacamole Recipe
Recipe: Steak Bites and Queso Bowl
Yields: 4 servings

Cook time: 15-20 minutes
Ingredients:
- 1 pound steak, cut into bite-sized pieces
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 pound Costco queso cheese
- 1 yellow bell pepper, sliced
- 1 red bell pepper, sliced
- 2 cups cooked rice
- Homemade guacamole (recipe below)
Instructions:
- Prepare the steak: Season the steak bites with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak bites until desired doneness.
- Mix the ingredients: In a large bowl, combine the cooked steak bites, Costco queso cheese, sliced yellow and red bell peppers, and cooked rice. Mix well to distribute the ingredients evenly.
- Serve: Transfer the mixture to a green flower bowl. Top with homemade guacamole.
Homemade Guacamole Recipe:
Ingredients:
- 3 ripe avocados, diced
- 1 tomato, diced
- 1/4 cup red onion, diced
- 1 jalapeño pepper, minced
- 1 tablespoon lime juice
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions:
- In a small bowl, mash the avocados with a fork.
- Add the diced tomato, red onion, jalapeño pepper, lime juice, cilantro, salt, and pepper. Stir until well combined.
